Our client is a 100% foreign corporation, a long-term, famous and trusted brand in this industry – hospitality service. They are looking for a talented Executive Chef with respectful details:
The Executive Chef would work as a Head & Leader of the Kitchen - being responsible to Food service to the clients and play the role as the Heart and the Brand Image of the Hotel
1. Organizing, coordinating, and overseeing cooking processes, tasks, and all activities within the food service establishment:
- Establishing Menus, Specialties and building/ creating Signature Dishes for the hotel, including:
+ Assigning prices to dishes, services based on production costs and cooking processes
+ Ensuring the dish standards are met before being served (going out to the customers)
+ Planning, directing the other members, or preparing by oneself Special Dishes for VVIP/special events
2. Developing business network with vendors and suppliers to effectively:
+ Managing budgets and orders of ingredients, food supplies and kitchen equipment
+ Taking care of food inventory and its quality
3. Overseeing all the activities in the kitchen and supervising kitchen staff
- Managing, coordinating, appointing the duties for Head Chef and kitchen staff to ensure the highest quality of standards are met for service, quality of food, cleanliness, and profitability
- Solving any issues that may arise among kitchen staffs
- Doing necessary training/ sharing and performance review for the Head Chef and kitchen staff
4. Managing budget and submitting periodic reports regarding costs and expenses.
5. Up to date gourmet trends, being open to new ideas and applying them to kitchen.
6. Applying industry appropriate safety and hygiene standards in the kitchen (HACCP)
* Number of Kitchen members: over 100
* Number of Outlets/ Restaurant: Three, including:
+ Buffet: around 300 seats
+ Restaurant: around 250 seats & VIP rooms
+ Lounge: 100 seats for soft drinks and snack
* Number of hotel rooms: over 300

- Willing to share opinions & train the staffs (not autocratic leadership)
- Being Able to Make Signature Dishes to promote the Brand
- An excellent communicator to both clients and colleagues
- Love to have long-term development with the Hotel
